Here’s a great excuse to use those thanksgiving leftovers or, heck, even bake a whole new turkey just so you have an excuse to eat these…


Turkey Quesadillas with Cranberry Sauce


cheddar or jack shredded cheese

couple handfuls fresh spinach

left-over turkey

left-over cranberry sauce (or just buy some in a can!)

Put together tortillas and place on medium-heat skillet. After finished,  top with cranberry sauce for a yummy twist! We enjoyed these the day after Thanksgiving and they were delicious. I’m tempted to fix a turkey just so we can eat them again!
