Mediterranean White Bean Salad
Mom passed on this tasty recipe….and it gets gobbled up every time it’s in the house. Enjoy!
MEDITERRANEAN WHITE BEAN SALAD
2 cans white beans, rinsed and drained
1/2 cup sliced green olives
2 roasted red peppers from a jar of roasted red peppers, diced
1 cucumber, scrubbed and diced
1/2 cup thinly sliced green onions, about 4 green onions
3 Roma tomatoes, cored, diced
1/2 cup chopped fresh parsley (one bunch of parsley)
2 tablespoons white balsamic vinegar
1/4 cup extra virgin olive oil
Salt and freshly ground black pepper, to taste
Combine all ingredients in a large bowl. Season to taste with the salt and pepper.
Cover and refrigerate until ready to serve.
Makes 6 servings.
