Mediterranean Gratin

1 box roasted garlic and olive oil whole wheat couscous

6 C. fresh baby spinach

2 T water

1/2 C roasted red bell peppers, drained and chopped

1 1/2 t grated lemon peel

1/4 t sea salt

1 can garbanzo beans drained, rinsed

1 cup crumbled feta (I used goat cheese)

1/2 C coarsely chopped walnuts

1 T olive oil

Heat oven to 350 and prepare couscous for version without olive oil. Spray 2 qt. glass baking dish. In 12 inch skillet, place spinach and 2 T water. Cover; cook over medium heat 2 to 4 minutes, stirring occasionally until spinach is wilted. Stir in couscous, peppers, lemon peel, salt ,beans, and1/2 cup of the cheese. Spread into baking dish. In small bowl, mix remaining cheese, walnuts, and oil. Sprinkle over couscous mixture. Bake uncovered for 20-25minutes or until heated through.
