Monday’s Menu Musings (on Friday)

I’ve been without my computer for about a week now (gotta hate those viruses but I loved the simple-ness of being without it) and I’m sneaking a quick moment on my man’s work computer to send these fabulous looking soup recipes your way, sent to me from my mom. Enjoy especially during the cold, winter days…

Italian Wedding Soup

1/2 pound extra-lean ground beef
1 egg, lightly beaten
2 tablespoons dry bread crumbs
1 tablespoon grated Parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon onion powder
6 cups chicken broth
1 cup beef broth
2 cups thinly sliced escarole
1/2 cup orzo pasta
1/3 cup finely chopped carrot

In medium bowl, combine meat, egg, bread crumbs, cheese, basil and onion powder. Shape into 3/4 inch balls. In a large saucepan, heat chicken and beef broth to boiling. Stir in escarole, orzo, carrot and meatballs. Bring to boil. Reduce heat to medium. Cook at a slow boil for 10 minutes, or until orzo is al dente. Stir frequently. Serves: 4.

Quick, Easy and Fabulous Potato Soup

2 medium potatoes, peeled and diced
2 cups water
1 large onion, chopped
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
1 1/2 cups milk

Place potatoes and water in a large saucepan. Cook over medium heat until potatoes are tender, about 7 to 10 minutes. Meanwhile, in another saucepan, sauté chopped onion in the butter until tender. Stir in the flour, salt, thyme, rosemary and pepper. Gradually add milk. Bring to a boil. Cook, stirring for 2 minutes. Add potatoes with hot water. Heat through and serve hot. Serves: 5.

Semi-Homemade Tomato Soup

1/4 cup finely chopped onion
1 tablespoon butter or margarine
1/4 teaspoon dried basil
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1 (10.75 ounce) can condensed tomato soup, undiluted
1 cup milk

In a saucepan, Sauté onion in butter over medium heat until tender. Add basil, paprika and garlic powder. Stir in soup and milk until well blended. Continue to cook for about 6 minutes or until heated through. Serves: 2.
