Monday’s Menu Musings

We enjoyed waffles and turkey bacon tonight for dinner. Thought I’de pass on this Figgin’s original homemade waffle batter…serve it up with some Wild Blueberry Syrup from this incredible company (and also from the great state of Maine where my mom grew up and where my grandmother lives) and sprinkle with flax seed, wheat germ and some sliced bananas and fresh berries and serve with a glass of orange juice and you will find yourself smiling. Enjoy!




FiveFiggs Good-For-You  Waffles

2 large eggs

2 cups multigrain or whole wheat flour

1 cup whole, fresh milk

3/4 cup buttermilk

1/2 cup applesauce

1 T honey (or packed brown sugar)

4 tsp baking powder

1/4 tsp seasalt


1. Heat waffle iron

2. Beat eggs until fluffy and beat remaining ingredients just until smooth

3. Serve immediately
