Monday’s Menu Musings

 

We do alot of soups during the Fall and Winter so I’m always on the lookout for quick, easy but nutritionally packed soup recipes. This fabulous gal brought this yummy soup to our community dinner the other day and it was so delicious! I’m convinced you will think so too…

 

Chicken & White Bean Soup with Spinach & Parmesan

1 can vegetable broth + 1 cup chicken broth

1 cup pasta sauce

1 can garbanzo beans

1/4 teaspoon red pepper flakes (or to taste, less or more to adjust spice)

1 1/2 chicken breasts, sliced thin

salt & pepper

3 handfuls baby spinach

1/4 cup dried basil

grated parmesan

Bring broth, pasta sauce, beans and red pepper flakes to simmer.

Turn heat to low.

Salt and pepper chicken;add to broth.

Poach chicken, about 3-4 minutes (broth should barely simmer)

Stir in spinach.

Cook until spinach is wilted and chicken is cooked through, about 3-4 minutes more.

Stir in basil, s&p to taste.

Serve in bowls and top with parmesan.
