Monday’s Menu Musings

You’ve got to try this one. After I made my home- made salsa, mom tried to one-up me and made a different salsa for a women’s event at our church. And she won. This stuff is incredible. The recipe actually comes from a very dear family friend so it’s no surprise that this stuff is so good. Enjoy!

Italian Salsa with Feta

4 chopped plum tomatoes

2 T chopped onion

2 chopped cloves of garlic  (of course !!)

4 oz. crumbled feta

1 T fresh chopped parsley

3 T red wine vinegar

2 T olive oil

½ t oregano

½ t salt

Gently mix together

Lightly blend in 2 chopped avocados right before serving.

(Cut avocado in ½ to ¾ in. cubes or else it gets too mushy when you mix it.)

Serve with scoop-type of Doritos or fritoes.
