Monday’s Menu Musings

It’s Tuesday again and I didn’t get around to posting Monday’s recipe but I’m pretty sure you won’t really care once you get a taste of this amazing soup that my chef mom passed along ( I tweaked the recipe a bit, it’s the creativity in me) The best part about it is that it makes ALOT. So plan to share it with someone, freeze it for later or have some friends over to help you eat it. We serve ours with tortilla chips, shredded cheddar, plain yogurt (in place of sour cream) and chopped avacados. Enjoy!

Taco Soup

2 cans black beans

2 cans chili beans

2 cans corn

2 large cans (like 32 oz.) tomatoe sauce + 1 can full of water (more or less depending on whether you like yours thick or thinner)

2 cans diced green chili peppers

2 packages taco seasoning

2 packages ranch dressing

2 lbs ground beef (we use ground turkey)

1 large onion, diced


Brown the meat with the onion until cooked through. Literally dump everything else in a large pot or crockpot and add the cooked meat mixture. Let simmer in crockpot for a few hours on low or over the stove on low/medium heat for an hour or so.


** For added nutrition, I sometimes puree 1 or 2 packages of fresh spinach and or cooked carrots with a little of the tomatoe sauce and dump it in the soup and you can’t even tell it’s in there
