Monday’s Menu Musings
Here are a couple of healthy snack ideas: frozen grapes and homemade hummus. When your grapes start getting a little too soft for eating, wash them and thrown them in the freezer. It makes for a great healthy treat in the summer heat (like the rhyme?) We also love hummus in our house and with as much as we consume, I decided to try and make it myself. It’s much cheaper and you may have to tweak the recipe according to your own taste buds, but here’s what worked for us:
1 can chickpeas
1-2 tsp lemon juice
2-3 tsp tahini
2-3 T olive oil
salt, pepper, roasted red peppers, minced garlic, chopped green olives…or whatever else you like to flavor yours with.
Put it all in a blender until desired consistency, enjoy with warm pita chips, or sliced veggies or by the spoonful as Jada likes to eat it!
