002 Found this recipe here. Tried it. Love it! Again, it was a hit with the girls as well and I especially love that this recipe is cheap, easy, quick and versatile. You could throw in some shredded chicken, ground turkey or some other veggies. But it’s also delicious on its’ own. I served ours with bowls of fresh peaches and blackberries.  Enjoy!


Black Beans and Rice
1-2 cups of rice
1 medium onion, chopped
“some” olive oil (2-3 tbsp if you’re conservative, 2 or 3 times around the pan if not)
1 tsp garlic (or 2-3 cloves, minced)
2 cans black beans, rinsed and drained
1 tsp salt
2 tsp chili powder
1 tsp dried oregano
1 tsp cumin
.5 tsp ground coriander
1 cup water
shredded cheese (optional)
Cook desired amount of rice according to directions. Chop onion, saute in olive oil 5-6 minutes. Add garlic, cook one more minute. Add beans, spices, and water, stir well. Bring to a boil, then reduce heat, cover and simmer 5-10 minutes. Serve beans over rice, sprinkle with cheese.
