The word “tofu” always threw me off a little, but we like it here in the Figgins household. If you have never experimented with tofu before, here is a good recipe to try. All of us loved it, even the girls.
Tofu and Sweet Potatoe Jambalaya
1 package (14 oz) firm tofu
1 tbl olive oil ( i use coconut oil)
1 large sweet potato, peeled and cubed
2 cloves garlic, minced
1 can vegetable or chicken broth
1 box garlic/herb(or whatever flavor) couscous
2 tbl worcestershire sauce
1/4 tsp cayenne pepper
1 can black beans, rinsed and drained
12 medium green onions, sliced
1. Drain tofu, press between paper towels to remove excess water and cut into 3/4 inch cubes
2. Heatoil over med. heat. Cook tofu until light, golden brown. Set aside
3. Add sweet potatoe and garlic until potatoe begins to brown. Stir in broth, couscous, sauce and pepper. Cover and simmer a few minutes (add a little extra water or broth if thick)
4.Stir in beans, tofu and onions until heated through, enjoy!
